Sunday Prep

Clean, tenderize and divide chicken breasts. I bought 2 family packs so I have one bag seasoned with Mrs. Dash Table Blend in the fridge for tomorrows packets. 1 freezer bag marinating with Asiago Garlic Vinaigrette (use whatever half used oil based dressing you have in your fridge) put in the freezer for future use, and 2 freezer bags marinating with Italian dressing in the freezer. One for Thursdays dinner, one for a future use.

After dinner chop up ham for Wednesday's Quiche(s). Put bone in a freezer bag and freeze for Saturday's Split Pea Soup.

I had a lot of ham left over. I chopped up 4 cups and divided in 3 freezer bags for more quiches!

Weekly Meal Plan 3/28/10 - 4/3/10

Sunday

Honey Glazed Ham

2 cups honey
2 cups brown sugar
1/3 cup cider vinegar
2 teaspoons ground nutmeg
2 teaspoons ground cinnamon
2 teaspoons ground cloves
5 to 6 lb. cooked ham, bone in

Combine honey ,brown sugar, vinegar, nutmet, cinnamon and cloves. Bake ham at 350° for one hour, basting with honey sauce occasionally. Place in broiler to glaze top.

Ham and Asparagus Quiche

5 large eggs
3/4 cup milk
fresh ground pepper
pinch of nutmeg
1 frozen 9" deep dish pie crust
2/3 cup chopped ham
2/3 cup chopped asparagus
2/3 cup shredded cheese

Pre-heat oven to 350°. Beat eggs, milk, pepper and nutmeg until eggs are a little frothy. Put ham, asparagus and cheese in bottom of pie crust. Pour egg mixture in pie crust. Place on cookie sheet and bake 50 minutes or until top is golden and toothpick comes out clean. I usually double this up (since the pie crusts come in 2 packs) and serve the second quiche for breakfast.

1 1/2 - 2 lbs. Boneless Skinless Chicken Breasts
Italian Dressing

Marinate Chicken Breasts in Italian Dressing. Grill.

Baked Potatoes (bake them on the grill)

Frozen Vegetable of your choice

Friday

Tuna Fish Sandwich

Potato Chips

Fresh Vegetables with Dip

Dip

1 cup sour cream
1 tablespoon Mrs. Dash Onion & Herb

Mix together and serve with fresh vegetables.

Get Ready for the Week

I like to do as much prep work as I can on Sunday, so everything is ready to go during the week. Make the meatballs for tomorrow. Make and freeze the hamburgers. Make the Hot Dog Sauce, divide and freeze. While making the Hot Dog Sauce I realized I did not have Tomato Puree or Tomato Sauce. Using the original recipe as inspiration I created my own sauce with the ingredients I had on hand.

Gia's Hot Dog Sauce

1 lb. lean ground beef
1 small onion, finely diced
1 clove garlic, diced
1 Tablespoon chili powder
1 1/2 teaspoon paprika
1/1/2 teaspoon red pepper flakes
1 Tablespoon brown sugar
1 - 15 oz. can tomato sauce
1/2 teaspoon olive oil

Heat oil over medium heat add onion, saute 2 minutes. Add ground beef and garlic cook until meat is no longer pink. Add chili powder, paprika, red pepper flakes. Stir. Let spices cook for a few minutes. Add brown sugar and tomato sauce. Stir. Turn heat to low and simmer until thick.

Weekly Meal Plan 3/21/10 - 3/27/10

Sunday:

Grilled Pork Loin With Bacon - 17140 - Recipezaar

Grilled Potatoes
1 lb. Potatoes, sliced
1 small onion diced
3 tbs. butter
salt and pepper to taste

Place all ingredients in foil, fold up so all sides are sealed and place on grill 45 min to an hour.

Tuesday:

Pork Quesadillas
Leftover Pork Loin from Sunday, chopped
Shredded Cheese
Flour Tortillas
Fresh Guacamole (Avocados and a McCormic Guacamole Mix)
Sour Cream

Top Tortillas with chopped pork and shredded cheese, fold over. Place on cookie sheet and bake in a 350 degree oven until pork is heated and cheese is melted. Top with fresh guacamole and sour cream.

Welcome!

This blog started out as a list of our weekly grocery deals for our friends and family and recipes to go with the shopping list, but it was a ton of work and no one was really using it anyway. We are no longer posting the grocery deals but I really enjoyed keeping track of the new recipes I was trying so I am going to continue to that. Once a week I am going to try a new recipe from my many cookbooks and food magazines and post it here. If you try it, leave a review.
